The flavors of the Mediterranean bring this one stop meal to life! Lemon, garlic, and rosemary pair wonderfully with the creamy potatoes and salty olives that you cook alongside your chicken. Marinate your chicken overnight to maximize flavor.
Ingredients
  • 1 whole chicken
  • ½ cup olive oil
  • Zest and juice of 2 lemons
  • 4 cloves garlic, peeled and smashed
  • 4 sprigs rosemary
  • Salt and freshly ground black pepper
  • 1 ½ pounds small red new potatoes, scrubbed and halved
  • 1 cup imported green olives, pitted
  • 1 whole chicken
  • 118.29ml olive oil
  • Zest and juice of 2 lemons
  • 4 cloves garlic, peeled and smashed
  • 4 sprigs rosemary
  • Salt and freshly ground black pepper
  • 680.39g small red new potatoes, scrubbed and halved
  • 236.59ml imported green olives, pitted

Preparation
STEP 1

Pat chicken dry with paper towels. In a large bowl, combine oil, lemon zest and juice, garlic and rosemary. Season with salt and pepper. Place chicken in bowl and coat well with marinade. Cover and refrigerate overnight.

STEP 2

Preheat oven to 400°F.

STEP 3

Place chicken in a large roasting pan. Place rosemary sprigs and garlic from marinade in cavity of chicken. Surround chicken with potato halves and olives. Drizzle with marinade.

STEP 4

Roast chicken for 1 – 1 1/2 hours, basting occasionally, until internal temperature reaches 165°F. Remove from oven, cover loosely with foil and rest for 5-10 minutes before carving.
