Ingredients
- 1 tablespoon dried thyme leaves
- 2 tablespoons maple syrup
- 1 teaspoon garlic powder
- ½ cup olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 (6 pounds) bone-in turkey breast, patted dry
- 4 stalks celery, coarsely chopped
- 2 medium onions, coarsely chopped
- 12.78g dried thyme leaves
- 25.56g maple syrup
- 4.26g garlic powder
- 118.29ml olive oil
- 8.52g kosher salt
- 4.26g freshly ground black pepper
- 1 (2721.55g) bone-in turkey breast, patted dry
- 4 stalks celery, coarsely chopped
- 2 medium onions, coarsely chopped

Preparation
STEP 1
Preheat oven to 350°F.
STEP 2
Mix together thyme, maple syrup, garlic powder, oil, salt and pepper. Rub over all sides of turkey breast including under the skin.
STEP 3
Add onions and celery to a roasting pan. Place seasoned turkey, breast side down, on top of vegetables and roast until halfway cooked, about 1 hour.
STEP 4
Flip turkey breast side up and finish cooking, basting with any accumulated juices, until thermometer inserted in thickest part registers 165°F, about 2-2 ½ hours total (20 minutes per pound).
STEP 5
Let turkey breast rest for 10 minutes before carving.
