Healthy Egg Tacos

Whether breakfast, lunch, or dinner eggs are the answer! These healthy tacos are delicious any time of day. Add all or some of the toppings! We love the added benefits and (possibly surprising) flavor of kraut!
Ingredients
  • Olive oil, avocado oil, or butter
  • 1 bell pepper, sliced (any color)
  • Salt and pepper
  • 4 eggs, beaten
  • Tortillas, toasted or warmed (corn, sprouted grain, or flour)
  • Toppings:
  • ½ cup halved cherry tomatoes
  • 1 jalapeno, sliced
  • 1 avocado, sliced
  • ½ cup sauerkraut or curtido
  • 1 cup black beans (whole or refried), heated
  • Greek yogurt
  • Sautéed spinach or kale
  • Shredded cheese or cotija
  • Salsa or hot sauce

  • Shredded cheese or cotija

Preparation
STEP 1

Heat a non-stick or cast-iron pan to medium heat. Add oil or butter.

STEP 2

Add sliced peppers, and season with salt and pepper. Cook until lightly browned and tender. Set aside.

STEP 3

Return pan to heat and coat with more oil or butter. Add eggs and season with salt and pepper. Scramble until just cooked.

STEP 4

Build tacos with warmed tortillas, scrambled eggs, sauteed peppers and your favorite toppings.
