Lean pork, pineapple and lots of vegetables makes this a healthy and easy meal the whole family will love. Slightly sweet and sour, lots of color, and fast clean up. Also delicious with chicken!
Ingredients
  • 1 ½ pounds pork tenderloin, cut into 1-inch pieces
  • 1 red or orange bell pepper, cut into large pieces
  • 1 medium red onion, cut into large pieces
  • 1 medium zucchini, cut into large pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 2 tablespoons neutral cooking oil
  • 2 tablespoons BBQ spice rub
  • 1 cup teriyaki or Hawaiian BBQ sauce
  • 2 cups cooked rice (white, brown or cauliflower)
  • Sliced green onions and toasted sesame seeds for garnish, optional
  • 680.39g pork tenderloin, cut into 1-inch pieces

  • 236.59ml pineapple chunks (fresh or canned)
  • 25.56g neutral cooking oil
  • 25.56g BBQ spice rub
  • 236.59ml teriyaki or Hawaiian BBQ sauce
  • 473.18ml cooked rice (white, brown or cauliflower)
  • Sliced green onions and toasted sesame seeds for garnish, optional

Preparation
STEP 1

Preheat oven to 400˚F.

STEP 2

Add pork, bell pepper, red onion, zucchini and pineapple to a large sheet pan. Season and coat with spice rub and oil. Spread evenly over pan.

STEP 3

Bake in preheated oven until browned and cooked through, about 20 minutes.

STEP 4

Remove from oven and change oven from bake to broil. Toss meat, vegetables and fruit with sauce. Return pan to oven and broil for 5 minutes to caramelize.

STEP 5

Divide and serve mixture over warm rice. Garnish with sliced onions and toasted sesame seeds if using.
