Grilled Gnocchi Kebabs

- Bamboo skewers, soaked
- 1 package fresh gnocchi
- 1 red or yellow pepper, cut into medium pieces
- 2 zucchini, cut into rounds or thin slices to accordion
- ½ pint cherry tomatoes
- Olive oil
- Salt and pepper
- ¼ cup basil pesto
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper
- Options:
- Red or sweet onion, cut into medium sized pieces
- 1 piece grilling cheese (bread cheese or halloumi), chunked
- Mushrooms, whole or halved
- Plant-based sausage, sliced
- Marinara sauce, warmed for dipping

Let’s cook gnocchi on the grill! These kebabs are not only beautiful with a rainbow of colors, but also super easy and delicious! Everyone will love them, especially vegetarians!
Preheat grill to medium-high heat.
If you prefer softer gnocchi, boil gnocchi in a pot of salted water for 2 minutes. Drain most of the water. For more crispy gnocchi, do not pre-boil, just be sure the gnocchi are fresh (not dried)!
Build skewers (pre-soaked) with gnocchi (about 3-5 per) alternating with, zucchini, cherry tomatoes, bell peppers and any other optional add-ons you would like to include. Season with olive oil, salt and pepper.
Grill skewers, turning regularly, until gnocchi are browned and crisped and vegetables have grill marks and are softened, about 7 minutes total.
While skewers are grilling mix pesto with lemon juice and olive oil.
Transfer grilled skewers to a platter. Drizzle pesto sauce over the top and serve any remaining on the side. Great as an entrée or appetizer!
