Ingredients
- 4 (6 ounces) fish fillets of your choice (such as salmon, halibut, or cod)
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1 cup diced seeded tomatoes or cherry tomatoes halved
- 2 cloves garlic, minced
- ½ cup chopped fresh basil
- Juice of 1 lemon
- Kosher salt and freshly ground black pepper to taste
- 4 (170.1g) fish fillets of your choice (such as salmon, halibut, or cod)
- 38.34g olive oil
- 38.34g unsalted butter
- 236.59ml diced seeded tomatoes or cherry tomatoes halved
- 2 cloves garlic, minced
- 118.29ml chopped fresh basil
- Juice of 1 lemon
- Kosher salt and freshly ground black pepper to taste
When local tomatoes are at their best, we want to use them everywhere we can. This simple fish pairs perfectly for a delicious healthy dinner.
Preparation
STEP 1
Pat fish fillets dry with paper towels. Season both sides with salt and pepper.
STEP 2
Heat olive oil in large skillet over medium-high heat. Add fish and cook for about 2 minutes per side.
STEP 3
Add butter, tomatoes, and garlic. Simmer for 2 minutes until fish is cooked through. Take care not to overcook.
STEP 4
Add lemon juice and basil. Adjust salt and pepper to taste. Garnish with additional basil if desired.
