Farro Caprese Salad

Ingredients
- 2 cups cooked farro
- 2 cups diced heirloom tomatoes or halved cherry tomatoes
- ¼ cup packed basil leaves, torn or cut into thin strips
- ½ pound fresh mozzarella, diced
- ¼ cup olive oil
- 1 tablespoon balsamic vinegar
- ¼ cup chopped shallot
- Salt and freshly ground black pepper to taste
- 473.18ml cooked farro
- 473.18ml diced heirloom tomatoes or halved cherry tomatoes
- 59.15ml packed basil leaves, torn or cut into thin strips
- 226.8g fresh mozzarella, diced
- 59.15ml olive oil
- 12.78g balsamic vinegar
- 59.15ml chopped shallot
- Salt and freshly ground black pepper to taste
Summer in a salad – this simple dish highlights the stars of a caprese – fresh tomatoes, basil and mozzarella. The farro adds depth as the shallots bring a bit of crispness to each bite.
Preparation
STEP 1
Place farro in a large serving bowl and add tomato, basil and mozzarella.
STEP 2
Separately whisk oil, vinegar, shallot, salt and pepper until well combined.
STEP 3
Lightly dress the farro salad with vinaigrette. Stir gently and serve at room temperature.
Options
This salad is great served alongside grilled meat or salmon or as a delicious picnic option.
You can also use fresh mini mozzarella balls.
