Ingredients
  • 2 cups cooked farro
  • 1 pound heirloom tomatoes, diced
  • ¼ cup fresh basil leaves, cut into thin strips
  • ½ pound fresh mozzarella, diced
  • ¼ cup olive oil
  • 1 tablespoon balsamic vinegar
  • ¼ cup chopped shallot
  • Salt and freshly ground black pepper to taste
  • 473.18ml cooked farro
  • 453.59g heirloom tomatoes, diced
  • 59.15ml fresh basil leaves, cut into thin strips
  • 226.8g fresh mozzarella, diced
  • 59.15ml olive oil
  • 12.78g balsamic vinegar
  • 59.15ml chopped shallot
  • Salt and freshly ground black pepper to taste

Preparation
STEP 1

Place cooked farro in a large serving bowl and add tomato, basil and mozzarella.

STEP 2

Separately whisk oil, vinegar, shallot, salt and pepper until well combined. Lightly dress the farro salad with the vinaigrette. Stir gently and serve at room temperature.
