Latkes are traditionally eaten during Hanukkah, but this easy version makes a wonderful edition as a side dish or appetizer for any day.
Ingredients
  • 3 cups shredded hash browns (thawed, if using frozen)
  • ½ cup finely chopped onion
  • 1 egg, slightly beaten
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ⅓ cup flour
  • Neutral oil for frying
  • Sea salt
  • Plain yogurt
  • Applesauce
  • 709.76ml shredded hash browns (thawed, if using frozen)
  • 118.29ml finely chopped onion
  • 1 egg, slightly beaten
  • 2.13g salt
  • 2.13g freshly ground black pepper
  • 78.86ml flour
  • Neutral oil for frying
  • Sea salt
  • Plain yogurt
  • Applesauce

Preparation
STEP 1

Combine the potatoes with onion, egg, salt, pepper and flour.

STEP 2

Heat vegetable oil in a skillet over medium-high heat. In batches (don’t over crowd the pan) drop the batter into the oil, about 1/3 cup at a time, flattening with a spatula.

STEP 3

Fry latkes until the potatoes are crisp and brown on both sides (about 2 minutes per side). Sprinkle with sea salt. Serve warm with yogurt and/or applesauce.

Options

You can use your own shredded potatoes if you prefer.

For different flavors, textures, and colors try substituting 2 cups of the shredded potato (or hashbrowns) with shredded turnip, shredded parsnip, or shredded beet!
