Easy Fried Rice

- 1 teaspoon toasted sesame oil
- 2 eggs, beaten
- Salt and white pepper
- 1 tablespoon cooking oil
- ½ onion, finely chopped (yellow or white)
- 3 cloves garlic, minced
- 1 carrot, finely chopped
- ½ cup frozen peas, optional
- 3 cups cooked cold rice (day old preferred)
- 2 tablespoons soy sauce
- 2 green onions, thinly sliced
- Toasted sesame seeds, for garnish, optional
- 4.26g toasted sesame oil
- 2 eggs, beaten
- Salt and white pepper
- 12.78g cooking oil
- 0.5 onion, finely chopped (yellow or white)
- 3 cloves garlic, minced
- 1 carrot, finely chopped
- 118.29ml frozen peas, optional
- 709.76ml cooked cold rice (day old preferred)
- 25.56g soy sauce
- 2 green onions, thinly sliced
- Toasted sesame seeds, for garnish, optional
Never let leftover rice go to waste again! With the addition of a few household staples, it makes the ideal fried rice. Remember when doing any kind of stir-fry, you cook hot and fast so be sure everything is ready before you start cooking.
Heat a large pan or wok to high heat.
Coat pan with sesame oil. Add beaten eggs. Season with salt and white pepper. Quickly fry and scramble stirring constantly. Remove eggs to a plate and set aside. Return pan to heat.
Coat pan with cooking oil. Add onion and garlic. Stir fry for about 1 minute stirring constantly until lightly colored and softened.
Add carrots and peas. Stir fry for 1 more minute.
Add rice to pan. Give it a good toss to loosen the rice and blend well with the veggies. Let it sit undisturbed for 1 minute to get a little brown and crispy. Then toss and cook until hot.
Reduce heat to low. Add soy sauce and egg back to the pan. Give it a light toss to mix everything together. Garnish with green onions and toasted sesame seeds if you wish. Serve immediately.
Some optional additions to fried rice can be chicken, pork, shrimp, tofu, more veggies or even pineapple!
For extra richness add a dollop of butter at the end of cooking or serve with a fried egg on top.
