This salad is always a pleasing surprise. The ramen noodles take on a great texture as they soak in the flavorful dressing, and the bok choy adds just the right crunch.
Ingredients
  • Dressing:
  • 2 tablespoons sugar
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons soy sauce
  • 2 teaspoons peanut butter
  • 1 teaspoon curry powder or to taste
  • ¼ teaspoon crushed red pepper flakes or to taste
  • Salad:
  • 1 (3 ounces) package ramen noodles, crumbled (discard seasoning packet)
  • ¼ cup diced toasted almonds (Bulk Foods)
  • 3 cups thinly sliced baby bok choy
  • 1 cup diced red bell pepper
  • 1 carrot, grated
  • ½ cup thinly sliced green onion
  • Dressing:
  • 25.56g sugar
  • 38.34g apple cider vinegar
  • 38.34g soy sauce
  • 8.52g peanut butter
  • 4.26g curry powder or to taste
  • 1.07g crushed red pepper flakes or to taste
  • Salad:
  • 1 (85.05g) package ramen noodles, crumbled (discard seasoning packet)
  • 59.15ml diced toasted almonds (Bulk Foods)
  • 709.76ml thinly sliced baby bok choy
  • 236.59ml diced red bell pepper
  • 1 carrot, grated
  • 118.29ml thinly sliced green onion
