Creamy spinach mixed with crispy gnocchi creates a twist on a classic. This would be an amazing side dish alongside a Holiday roast or bird, and can also hold its own as a plant-based main course.
Ingredients
  • 5 cups spinach
  • 1 clove garlic, minced
  • 2 packages refrigerated gnocchi
  • 4 tablespoons butter, divided
  • 3 tablespoons olive oil, divided
  • Salt and pepper
  • 1 sweet onion, chopped
  • 3 tablespoons flour
  • 3 cups whole milk
  • ½ cup shredded Gruyere cheese
  • ½ cup grated Parmesan plus ¼ cup for topping
  • 2 dashes of hot sauce
  • ½ teaspoon ground nutmeg
  • 1 tablespoon freshly squeezed lemon juice
  • 1182.94ml spinach
  • 1 clove garlic, minced
  • 2 packages refrigerated gnocchi
  • 51.12g butter, divided
  • 38.34g olive oil, divided
  • Salt and pepper
  • 1 sweet onion, chopped
  • 38.34g flour
  • 709.76ml whole milk
  • 118.29ml shredded Gruyere cheese
  • 118.29ml grated Parmesan plus ¼ cup for topping
  • 2 dashes of hot sauce
  • 2.13g ground nutmeg
  • 12.78g freshly squeezed lemon juice

Creamy spinach mixed with crispy gnocchi creates a twist on a classic. This would be an amazing side dish alongside a Holiday roast or bird, and can also hold its own as a plant-based main course.

Preparation
STEP 1

Heat a large skillet over medium high heat. Add 1 tablespoon of olive oil to the pan. Add minced garlic and stir. Cook until aromatic but be careful not to burn, about 1-2 minutes.

STEP 2

Add spinach. Season with salt and pepper, and sauté until wilted. Transfer to plate and set aside.

STEP 3

Return skillet to stove on medium high heat. Add 2 tablespoons of butter and 1 tablespoon of olive oil. Add gnocchi straight from package. Stir and cook until gnocchi are nicely browned and crispy on all sides. Transfer to sheet pan, sprinkle with salt, and set aside.

STEP 4

Again, return skillet to stove over medium heat. Add 2 tablespoons of butter and 1 tablespoon of olive oil and add chopped onion. Season with salt and pepper. Once onion is softened add flour. Stir until onions are fully coated. Slowly add milk while whisking. Cook until bubbly and thickened.

STEP 5

Lower heat to medium low. Slowly start adding cheese, first Gruyere and then Parmesan. Stirring between each to ensure cheese is evenly melted into sauce. Season with hot sauce, nutmeg, lemon juice and salt and pepper.

STEP 6

Add spinach back into pan and stir to evenly mix, then add gnocchi. Gently mix to lightly coat.

STEP 7

Transfer mixture to greased oven safe casserole pan. Sprinkle top with remaining Parmesan. Bake at 375˚ for 25-30 minutes until bubbly. Change oven to broil and watch closely until tops start to nicely brown, about 5 minutes. Serve hot.
