Remove pizza dough from refrigerator. Proof (the final rise) on counter at room temperature until the dough expands and gets soft and stretchy, about 30 minutes. It will almost double in size.
Preheat oven to 425°F.
Divide pizza dough in half to make 2 12-inch pizzas. Or leave whole to make one large. On a floured surface, stretch pizza dough to desired shape.
Mix apples, cinnamon and sugar, and arrange on pizza crust. Crumble goat cheese or brie and sprinkle over top of pizza.
Mix crumble topping ingredients, adding butter slowly until coarse mixture is formed. Sprinkle over top or apples.
Bake for 12-15 minutes, until crust is golden brown.
