Cheese Fondue

There is nothing but comfort and happiness when we are gathered around a table, liberally coating pieces of bread in melty cheese and wine sauce and devouring the deliciousness. Fondue, it’s a love language.
Ingredients
  • 1 large clove garlic
  • 1 cup white wine
  • 2 tablespoons lemon juice or Kirsch (cherry brandy)
  • 4 cups shredded fondue cheese (Swiss, Emmenthal, Gruyere, Comte, etc.)
  • 2 tablespoons flour or corn starch
  • 1 teaspoon nutmeg
  • 1 teaspoon sea salt
  • 1 teaspoon white pepper
  • 1 teaspoon dry mustard
  • Bread, fruit and vegetables for dipping
  • 1 large clove garlic
  • 236.59ml white wine
  • 25.56g lemon juice or Kirsch (cherry brandy)
  • 946.35ml shredded fondue cheese (Swiss, Emmenthal, Gruyere, Comte, etc.)
  • 25.56g flour or corn starch
  • 4.26g nutmeg
  • 4.26g sea salt
  • 4.26g white pepper
  • 4.26g dry mustard
  • Bread, fruit and vegetables for dipping

Preparation
STEP 1

Rub inside of fondue pot with whole clove of garlic; discard garlic.

STEP 2

In a separate bowl, toss cheese with flour or corn starch to coat. Set aside.

STEP 3

In a medium saucepan, bring wine and lemon juice or Kirsch to a simmer.

STEP 4

Slowly stir in grated cheese, about 1/4 cup at a time, allowing each addition to fully melt before adding the next.

STEP 5

Add salt, nutmeg, pepper and mustard. Blend well. Adjust seasoning to taste.

STEP 6

Serve with cubes of bread and/or cut fruit and vegetables.
