Yield:1 9-inch Pie
- 1 double crust pie dough (homemade or store bought)
- 7 cups (about 24 ounces) fresh or frozen berries of choice (one type or a combo)
- 1 cup granulated sugar
- 4 tablespoons cornstarch
- Squeeze of fresh lemon
- Dash of cinnamon (optional)
- 2 tablespoons butter, cut into small chunks
- 1 egg beaten with a little water
- Turbinado or granulated sugar for sprinkling

- 236.59ml granulated sugar
- 51.12g cornstarch
- Squeeze of fresh lemon
- Dash of cinnamon (optional)
- 25.56g butter, cut into small chunks
- 1 egg beaten with a little water
- Turbinado or granulated sugar for sprinkling
So they say, “it’s as easy as pie”! Well, many people may not agree, but the truth is if you combine berries with a few simple ingredients, and follow our steps, pie baking really can be for everyone!
Add berries to a large bowl (if using frozen berries, let them defrost for about 30 minutes so they are slightly soft but still icy).
Add sugar and cornstarch to berries with a squeeze of lemon, and dash of cinnamon if using. Toss berries to coat. Set aside.
Roll out first half of pie dough to about an 1/8 inch thick and place in pie plate. Trim edges 1 inch beyond the edge of the pie plate.
Add prepared berries to the bottom crust and top with butter chunks.
Roll out second crust and place on top or berries. Crimp around the edges of the pie with a fork or your fingers. Cut out 4-5 vent holes (slits) on top of crust.
Brush crust all over with egg wash. Sprinkle with sugar to coat the top evenly but lightly.
Chill pie in refrigerator for about 30 minutes to help minimize shrinkage of the crust while baking.
Preheat oven to 425°F.
Bake pie for 20 minutes. Reduce oven temperature to 375°F and bake for an additional 40 minutes. Pie is done when the crust is golden, and you see thick juices bubbling from the vents.
Cool pie for at least 1 hour before slicing and eating. Serve on its own or with vanilla ice cream or whipped cream.
For an extra depth of flavor try adding 1 tablespoon Chambord liquor to the berries.
