  • 3 cups fresh cherries, pitted and halved
  • 1–2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1–2 tablespoons honey or maple syrup
  • 1 small shallot, finely sliced, optional
  • 1 teaspoon fresh thyme leaves, finely chopped (or rosemary)
  • Pinch of kosher salt
  • Freshly cracked black pepper
  • 709.76ml fresh cherries, pitted and halved
  • 1–2 tablespoons olive oil
  • 25.56g balsamic vinegar
  • 1–2 tablespoons honey or maple syrup
  • 1 small shallot, finely sliced, optional
  • 4.26g fresh thyme leaves, finely chopped (or rosemary)
  • Pinch of kosher salt
  • Freshly cracked black pepper

Preparation
STEP 1

Preheat oven to 400°F.

STEP 2

Add cherries to a baking dish and toss with olive oil, balsamic vinegar, honey, shallot, thyme, salt, and pepper.

STEP 3

Roast for 15–20 minutes, stirring once halfway through, until cherries are softened, juicy, and slightly caramelized.

STEP 4

For a saucier consistency, lightly mash some of the cherries with a spoon before serving. Serve warm or at room temperature.

Options
