Ingredients
  • 2 Cornish game hens, split in half lengthwise
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ⅓ cup apricot preserves
  • 1 tablespoon soy sauce
  • 1 tablespoon orange juice
  • 2 Cornish game hens, split in half lengthwise
  • 4.26g kosher salt
  • 2.13g freshly cracked black pepper
  • 78.86ml apricot preserves
  • 12.78g soy sauce
  • 12.78g orange juice

Preparation
STEP 1

Preheat oven to 350°F.

STEP 2

Season hens all over with salt and black pepper. Place hens breast-side up in a roasting dish and cook for 30 minutes.

STEP 3

In a small bowl, combine the apricot, soy sauce and orange juice. Spoon about a third of the apricot mixture over the hens.

STEP 4

During cooking, baste the hens several times with remaining apricot mixture. Bake until golden brown and internal temperature reaches 165°F, about 30-35 minutes. Let stand 5 minutes before serving.
