- 2 Cornish game hens, split in half lengthwise
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- ⅓ cup apricot preserves
- 1 tablespoon soy sauce
- 1 tablespoon orange juice

Little birds with big flavor. Cornish game hens are a unique and easy way to add some magic to your meal. You can split the leg from the breast too for easier sharing.
Preparation
STEP 1
Preheat oven to 350°F.
STEP 2
Season hens all over with salt and black pepper. Place hens breast-side up in a roasting dish and cook for 30 minutes.
STEP 3
In a small bowl, combine the apricot, soy sauce and orange juice. Spoon about a third of the apricot mixture over the hens.
STEP 4
During cooking, baste the hens several times with remaining apricot mixture. Bake until golden brown and internal temperature reaches 165°F, about 30-35 minutes. Let stand 5 minutes before serving.
