White Chocolate Panettone Bread Pudding

Ingredients
- 3 ½ cups whipping cream, divided
- 1 cup milk
- ½ cup sugar
- 18 ounces white chocolate, coarsely chopped, divided
- 7 large egg yolks
- 2 large eggs
- 3 cups panettone, cubed (fruit type preferred)
- 828.06ml whipping cream, divided
- 236.59ml milk
- 118.29ml sugar
- 510.29g white chocolate, coarsely chopped, divided
- 7 large egg yolks
- 2 large eggs
- 709.76ml panettone, cubed (fruit type preferred)
This buttery and rich bread pudding is doused in a luscious white chocolate sauce. So delicious with the traditional fruit-filled Italian panettone.
Preparation
STEP 1
Preheat oven to 350°F.
STEP 2
Combine 3 cups cream, milk and sugar in saucepan. Bring to a simmer, stirring, until sugar is dissolved. Remove from heat. Add 1 ¾ cups chopped chocolate and stir until melted.
STEP 3
Whisk yolks and eggs in a medium-sized bowl. Gradually whisk in warm chocolate mixture (do this slowly to ensure eggs don’t cook).
STEP 4
Place bread cubes in a 2-quart glass baking dish coated in non-stick spray. Add chocolate mixture. Cover with foil and bake for 45 minutes.
STEP 5
Uncover and bake for 15 minutes more.
STEP 6
Cool slightly. Bring remaining cream to simmer. Add remaining chocolate and stir until smooth. Pour over bread pudding and serve.
