Named after the historic New York hotel, the Waldorf salad originally consisted of just apples, celery, and mayo. Now with the addition of grapes, walnuts and even chicken it’s a perfect choice for lunch or light starter.
Ingredients
  • 2 cups chopped cooked chicken breast
  • 2 crisp apples, cored and diced
  • 1 cup seedless red grapes, halved
  • 2 stalks celery, diced
  • ½ cup chopped walnuts, lightly toasted
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • ¼ cup mayonnaise or a combination with yogurt
  • Salt and pepper
  • 473.18ml chopped cooked chicken breast
  • 2 crisp apples, cored and diced
  • 236.59ml seedless red grapes, halved
  • 2 stalks celery, diced
  • 118.29ml chopped walnuts, lightly toasted
  • 12.78g lemon juice
  • 12.78g honey
  • 59.15ml mayonnaise or a combination with yogurt
  • Salt and pepper

Preparation
STEP 1

Toss chicken, apples, grapes, celery, and toasted walnuts.

STEP 2

Mix lemon juice, honey and mayonnaise and gently incorporate into the salad. Season with salt and pepper.

STEP 3

Great served on a leaf of butter lettuce or as a sandwich.

Options

Waldorf salad can also be made vegetarian without the chicken.

If you prefer a creamier salad add more mayonnaise or yogurt.
