Thai-Style Burgers with Cucumber Mint Relish

- Burger:
- 1 pound ground beef, chicken, turkey or pork
- 1 tablespoon finely chopped lemongrass
- ¼ cup chopped cilantro
- 1 tablespoon Thai fish sauce or soy sauce
- 2 teaspoons brown sugar
- ½ teaspoon grated lime zest
- 1 tablespoon red curry paste
- ½ teaspoon thinly sliced Thai chilies (remove seeds and ribs for less heat)
- 2 tablespoons toasted rice powder
- Pinch salt
- Relish:
- ½ English cucumber, finely chopped
- ¼ cup chopped mint
- 2 tablespoons chopped cilantro
- 3 tablespoons chopped green onions
- 1 tablespoon Thai fish sauce or soy sauce
- 2 tablespoons seasoned rice vinegar
- 1 teaspoon sugar
- Salt to taste
- Hawaiian or favorite hamburger bun
- Sweet chili sauce mixed with mayo, optional
- Finely shredded carrots, red cabbage and red onion for garnish, optional

- 59.15ml chopped cilantro
- 12.78g Thai fish sauce or soy sauce
- 8.52g brown sugar
- 2.13g grated lime zest
- 12.78g red curry paste
- 2.13g thinly sliced Thai chilies (remove seeds and ribs for less heat)
- 25.56g toasted rice powder
- Pinch salt
- Relish:
- 0.5 English cucumber, finely chopped
- 59.15ml chopped mint
- 25.56g chopped cilantro
- 38.34g chopped green onions
- 12.78g Thai fish sauce or soy sauce
- 25.56g seasoned rice vinegar
- 4.26g sugar
- Salt to taste
- Hawaiian or favorite hamburger bun
- Sweet chili sauce mixed with mayo, optional
- Finely shredded carrots, red cabbage and red onion for garnish, optional
We love burgers and it’s fun to switch them up and add loads of fun flavors! These burgers are packed with some of the bright flavors of Thailand such as lemongrass, cilantro, lime, chile and mint. So good! This recipe would also be delicious made into little meatballs served with the relish over rice.
In a large bowl combine ground meat, lemongrass, cilantro, fish sauce, brown sugar, lime zest, curry paste, thai chilies, toasted rice powder and salt. Mix well and shape into 4 burgers. Set aside and refrigerate for at least 15 minutes.
In another bowl, combine cucumber, mint, cilantro, green onions, fish sauce, vinegar, sugar and salt. Set aside.
Grill, broil or pan-fry burgers over medium-high heat until internal temperature reaches at least 155°F for beef or pork (165°F for chicken or turkey). Serve on buns with relish, sweet chili mayo, and optional garnishes.
To make toasted rice powder; toast dry white rice (ideally sticky rice, but any white rice will do) in a pan over medium heat until golden. Grind into a powder with either a spice/coffee grinder, food processor, or mortar and pestle. If this is not possible for you or feels like too much work, just omit it.
