We would eat this pasta for the standout color alone, but the flavor is even better! Give it a try, it’s divine!
Ingredients
  • 1 bunch lacinato kale, stems removed
  • 1 (5 ounces) bag baby spinach
  • 4 cloves garlic, peeled
  • ½ cup extra virgin olive oil
  • 1 lemon, zested
  • 1 lemon, juiced
  • ½ cup grated parmesan cheese
  • Salt and pepper
  • 1 box rigatoni (or favorite pasta)
  • Ricotta or burrata for garnish

  • 1 (141.75g) bag baby spinach
  • 4 cloves garlic, peeled
  • 118.29ml extra virgin olive oil
  • 1 lemon, zested
  • 1 lemon, juiced
  • 118.29ml grated parmesan cheese
  • Salt and pepper
  • 1 box rigatoni (or favorite pasta)
  • Ricotta or burrata for garnish

Preparation
STEP 1

Bring a large pot of salted water to a boil.

STEP 2

Add kale, spinach and garlic cloves. Cook until greens are wilted, and garlic is tender, about 2 minutes.

STEP 3

Using tongs or a strainer remove all the greens and garlic from the water and transfer to a blender. Leave the pot of water, we will use it again!

STEP 4

To the blender add olive oil, lemon zest, lemon juice, parmesan, salt and pepper. Puree until completely smooth. Taste for seasoning.

STEP 5

Bring the pot of water back to boil and cook pasta per package instructions.

STEP 6

Toss cooked drained pasta with super green sauce. Serve immediately with a dollop of ricotta cheese or burrata and extra lemon if desired.
