Primavera – the pasta of spring! Harness its full potential with loads of spring veggies and the sweetness of fresh shrimp.
Ingredients
  • 1 (16 ounces) box your favorite pasta
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • ½ cup sliced spring onion, shallot, or leek
  • 2 cloves garlic, minced
  • Salt and pepper
  • 8 ounces sliced mushrooms
  • 1 cup sliced asparagus
  • 1 pound shrimp (peeled and deveined)
  • 1 cup peas (fresh or frozen)
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese (plus more for serving)
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon fresh lemon juice
  • 1 (453.59g) box your favorite pasta
  • 25.56g butter
  • 12.78g olive oil
  • 118.29ml sliced spring onion, shallot, or leek
  • 2 cloves garlic, minced
  • Salt and pepper
  • 226.8g sliced mushrooms
  • 236.59ml sliced asparagus
  • 453.59g shrimp (peeled and deveined)
  • 236.59ml peas (fresh or frozen)
  • 236.59ml vegetable broth
  • 236.59ml heavy cream
  • 118.29ml grated parmesan cheese (plus more for serving)
  • 12.78g chopped fresh parsley
  • 12.78g chopped fresh dill
  • 12.78g fresh lemon juice

Primavera – the pasta of spring! Harness its full potential with loads of spring veggies and the sweetness of fresh shrimp.

Preparation
STEP 1

Bring a large pot of salted water to a boil. Cook pasta to al dente per package instructions.

STEP 2

Meanwhile, heat a large sauté pan to medium heat. Melt butter and olive oil together. Add onion and garlic. Season with salt and pepper. Cook until tender and fragrant, about 3 minutes.

STEP 3

Add mushrooms and asparagus. Cook for another 2-3 minutes.

STEP 4

Add shrimp and stir to coat and mix with all your ingredients. When about halfway cooked add peas and broth. Bring to a simmer. Season with salt and pepper.

STEP 5

Add cream and return to simmer. Add pasta and ¼ cup pasta water. Mix to coat.

STEP 6

Off heat add parmesan, fresh herbs and lemon juice. Serve immediately with extra parmesan on the side.

Options

Some possible additions could include artichoke hearts, red bell pepper, carrots, or fresh chives.

This pasta could also be made with chunked chicken breast or simply with vegetables only.
