Smoked Salmon and Daikon Salad

Ingredients
- 1 (1 inch) piece fresh ginger, peeled and minced
- 1 ½ tablespoons rice vinegar
- ¼ cup vegetable oil
- 1 tablespoon soy sauce
- ¼ teaspoon sugar
- 1 (5 ounces) package mixed salad greens
- ¼ pound daikon radish, peeled and julienne sliced or grated
- Salt and freshly ground black pepper to taste
- ½ pound smoked salmon, torn into bite-sized pieces
- 1 (1 inch) piece fresh ginger, peeled and minced
- 19.17g rice vinegar
- 59.15ml vegetable oil
- 12.78g soy sauce
- 1.07g sugar
- 1 (141.75g) package mixed salad greens
- 113.4g daikon radish, peeled and julienne sliced or grated
- Salt and freshly ground black pepper to taste
- 226.8g smoked salmon, torn into bite-sized pieces
Daikon is a long white radish with a mild flavor, less spicy than other varieties of radish. It can be baked, boiled, or stir-fried, but here we are enjoying it raw to capture its full flavor and texture.
Preparation
STEP 1
Combine ginger, vinegar, oil, soy sauce and sugar in a mixing bowl and whisk together.
STEP 2
Toss together salad greens and daikon.
STEP 3
Add dressing and toss gently. Season to taste with salt and pepper.
STEP 4
Divide greens between 4 plates and top with salmon.
