Halibut cheeks are a prized portion of the fish that have a tender, sweet, and mild flavor best compared to scallops. We love pan-searing them in butter, but they can also be baked or grilled.
Ingredients
  • 8 ounces halibut cheeks (or cod cheeks)
  • Salt and pepper
  • 3 tablespoons butter
  • 2 cloves garlic, smashed
  • 2 sprigs fresh thyme or tarragon
  • Lemon wedges for serving

Halibut cheeks are a prized portion of the fish that have a tender, sweet, and mild flavor best compared to scallops. We love pan-searing them in butter, but they can also be baked or grilled.

Preparation
STEP 1

Dry halibut cheeks with a paper towel then season with salt and pepper.

STEP 2

Heat a cast iron pan or large non-stick skillet to medium-high heat.

STEP 3

Add butter, garlic and thyme (or tarragon) to the pan. Once the butter is hot and melted add the halibut cheeks not touching.

STEP 4

Cook cheeks on one side until lightly browned for about 2 minutes. Flip and cook on the other side until browned, basting with the melted butter while they cook, another 2 minutes.

STEP 5

Serve cheeks with garlic thyme butter spooned over the top and a squeeze of fresh lemon.
