Ingredients
- 1 pound ground sausage or ground beef
- 1 tablespoon olive oil (only if using very lean beef)
- 2 cups sliced mushrooms
- 4 cups baby spinach
- 6–8 large eggs, lightly beaten
- 1–1½ cups shredded cheese (cheddar, mozzarella, or a blend)
- Salt and pepper, to taste
- 453.59g ground sausage or ground beef
- 12.78g olive oil (only if using very lean beef)
- 473.18ml sliced mushrooms
- 946.35ml baby spinach
- 6–8 large eggs, lightly beaten
- 1–1½ cups shredded cheese (cheddar, mozzarella, or a blend)
- Salt and pepper, to taste
This hearty skillet scramble is a playful twist on the San Francisco classic Joe’s Special. It all comes together in one pan for an easy, satisfying meal that works just as well for breakfast or brunch as it does for dinner.
Preparation
STEP 1
Heat a large skillet over medium heat. Add ground sausage or beef and cook, breaking it up, until browned and cooked through. Drain excess fat if needed.
STEP 2
Add mushrooms and cook 4–5 minutes, until softened and lightly golden.
STEP 3
Stir in spinach and cook until just wilted.
STEP 4
Reduce heat to medium-low and pour in the eggs. Gently stir, scraping the bottom of the pan, until softly set.
STEP 5
Sprinkle in shredded cheese and fold gently until melted. Season with salt and pepper to taste. Serve immediately.
Options
For a more classic Joe’s special feel when using ground beef optional additions can include:
½ small onion, finely chopped (added with the meat)
2 cloves garlic, minced (added with the mushrooms)
Pinch of ground nutmeg
