Preparation
STEP 1
Preheat oven to 350°F.
STEP 2
Place salmon on a lightly oiled parchment lined baking sheet or in a glass baking dish.
STEP 3
Season salmon well with salt and pepper. Add mayonnaise and evenly spread over the flesh. Sprinkle onion and lemon zest over that. Top with lemon slices if you choose.
STEP 4
Cover pan with foil. Bake fish for 20-25 minutes until it just becomes firm to the touch and flakes easily.
STEP 5
Switch oven to broil. Place uncovered salmon back into the oven and broil until top is lightly browned, about 5 minutes more. Watch closely to prevent burning.
