A true southern dish! Filled with ground beef, sausage, and spices it is perfect on its own, as a hearty side dish, or used as a stuffing for chicken, quail, or bell peppers!
Ingredients
  • 1 tablespoon bacon fat or cooking oil
  • 1 pound ground beef
  • 1 pound ground pork sausage
  • 1 green bell pepper, chopped
  • 1 yellow onion, chopped
  • 1 celery rib, chopped
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons minced garlic
  • 1 ½ teaspoons salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • ¼ cup flour
  • 2 cups chicken broth
  • 3 bay leaves
  • 4-5 cups cooked rice (prepared with chicken broth)
  • 2 tablespoons chopped fresh parsley
  • 12.78g bacon fat or cooking oil
  • 453.59g ground beef
  • 453.59g ground pork sausage
  • 1 green bell pepper, chopped
  • 1 yellow onion, chopped
  • 1 celery rib, chopped
  • 12.78g dried oregano
  • 8.52g dried thyme
  • 8.52g minced garlic
  • 6.39g salt
  • 2.13g ground black pepper
  • 4.26g chili powder
  • 1.07g cayenne pepper
  • 59.15ml flour
  • 473.18ml chicken broth
  • 3 bay leaves
  • 4-5 cups cooked rice (prepared with chicken broth)
  • 25.56g chopped fresh parsley

Preparation
STEP 1

In a large skillet, heat bacon fat or cooking oil. Add ground beef and sausage. Break up meat with wooden spoon and cook until it starts to brown.

STEP 2

Once meat is about halfway cooked add bell pepper, onion and celery. Continue cooking until meat is fully browned, and veggies are softened.

STEP 3

To the pan add thyme, garlic, salt, pepper, chili powder, and cayenne pepper. Give it a stir to disperse in the pan.

STEP 4

Add the flour. Stir, making sure it coats all the meat.

STEP 5

Add broth and bay leaves. Scrape the bottom of the pan to loosen any of the browned bits. Simmer for 5-8 minutes.

STEP 6

Fold in the cooked rice and parsley. Simmer for 5 more minutes, remove bay leaves, serve and enjoy.
