Indonesian Coconut Satay

Ingredients
- 1 onion, cut into medium chunks, divided
- 2 cloves garlic
- ¼ cup tamarind concentrate, undiluted
- ¼ cup sweet soy sauce – (if not available, sub with 3 tablespoons honey with 1 tablespoon soy sauce)
- 1 ½ teaspoons sambal oelek, or to taste
- ⅓ cup unsweetened shredded coconut
- 1 tablespoon sesame oil
- 1 ½ pounds chicken, pork, lamb or beef cut into 1-inch pieces

- 59.15ml sweet soy sauce – (if not available, sub with 3 tablespoons honey with 1 tablespoon soy sauce)
- 6.39g sambal oelek, or to taste
- 78.86ml unsweetened shredded coconut
- 12.78g sesame oil
- 680.39g chicken, pork, lamb or beef cut into 1-inch pieces

Preparation
STEP 1
In a food processor, combine 1/2 of the onion, garlic, tamarind concentrate, sweet soy sauce and sambal oelek. Process until smooth. Add coconut and sesame oil and pulse several times.
STEP 2
Place meat and sauce in a large bowl and toss to coat well. Marinate in refrigerator for at least 2 hours or overnight.
STEP 3
Take the remaining 1/2 onion pieces and thread on pre-soaked skewers alternating pieces with meat. Grill or broil under high heat 2 minutes per side, until slightly charred and cooked through. Serve with peanut sauce.
