Ingredients
  • 3 tablespoons vegetable oil
  • 1 pound beef stew meat, cut into small cubes
  • ½ cup finely chopped onion
  • ½ cup chopped celery
  • ½ cup sliced carrots
  • ½ cup diced potato
  • 2 garlic cloves, minced
  • Salt and black pepper to taste
  • 2 teaspoons Italian seasoning
  • 1 (14 ½ ounces) can diced tomatoes
  • 1 cup pearl barley
  • 1 cup roughly chopped green cabbage
  • 1 bay leaf
  • 6 ½ cups beef or vegetable broth
  • Chopped fresh parsley
  • 38.34g vegetable oil
  • 453.59g beef stew meat, cut into small cubes
  • 118.29ml finely chopped onion
  • 118.29ml chopped celery
  • 118.29ml sliced carrots
  • 118.29ml diced potato
  • 2 garlic cloves, minced
  • Salt and black pepper to taste
  • 8.52g Italian seasoning
  • 1 (411.07g) can diced tomatoes
  • 236.59ml pearl barley
  • 236.59ml roughly chopped green cabbage
  • 1 bay leaf
  • 1537.82ml beef or vegetable broth
  • Chopped fresh parsley

Preparation
STEP 1

Heat oil in a large, heavy Dutch oven over medium-high heat. Add beef and cook until brown, stirring occasionally, about 8 minutes.

STEP 2

Add onion, carrot, celery, potatoes, garlic and herbs. Season liberally with salt and pepper. Sauté for about 5 minutes.

STEP 3

Stir in tomatoes with juices, barley, cabbage, bay leaf and broth. Cover and simmer until meat is tender, about 1 hour.

STEP 4

Remove bay leaf and adjust seasoning to taste. Sprinkle soup with parsley and serve.
