- ⅓ cup olive oil or melted coconut oil
- ½ cup maple syrup or honey
- 2 eggs
- ¼ cup milk (dairy or plant-based)
- 1 teaspoon vanilla extract
- 1 cup mashed banana (about 3 over-ripe bananas)
- 1 ¼ cups whole wheat flour
- ¼ cup rolled oats
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup chopped walnuts, optional
- Optional Topping:
- ¼ cup rolled oats
- ½ teaspoon cinnamon
- 1 tablespoon turbinado sugar
- 78.86ml olive oil or melted coconut oil
- 118.29ml maple syrup or honey

Preparation
STEP 2
In a large bowl add oil, maple syrup or honey, eggs, milk and vanilla. Whisk well to combine.
STEP 3
Add mashed banana and mix.
STEP 4
To the same bowl add flour, oats, baking soda, salt, cinnamon and nutmeg. Stir with a wooden spoon or spatula until just combined. Fold in chopped nuts (or other mix-ins) if using.
STEP 5
Transfer batter to well-greased or paper lined muffin tin, filling each ¾ full (1/4 cup batter per muffin).
STEP 6
For an added touch mix ¼ cup oats with ½ teaspoon of cinnamon and 1 tablespoon of turbinado sugar. Sprinkle mixture over each muffin cup.
STEP 7
Bake muffins for 22-25 minutes or until a toothpick comes out clean. Let cool for 10 minutes. Either serve still warm or cool to room temperature and store in an air-tight container.
Options
Other add-ins along or instead of the nuts that are also delicious include blueberries or chocolate chips.
