Preheat oven to 375°F. Coat a cookie sheet with non-stick cooking spray.
In a mixer, cream butter and sugars. Add egg, vanilla and nut butter. Mix to just combine. Scrape sides of bowl and add flour, baking soda, and salt. Mix to combine, scraping sides as necessary.
Drop by rounded tablespoon 2 inches apart onto prepared sheet. Bake for 10-12 minutes. Cool briefly on sheet, then transfer to a rack.
Nutella is a great example of a hazelnut-chocolate butter. Also, you can find hazelnut-chocolate butter in our Bulk Foods Department.
For an extra crunch sprinkle the tops of the cookies with chopped hazelnuts halfway through the bake time.
