Grilled Sweet Potato Salad

Ingredients
- ¼ cup olive oil, plus extra for brushing
- 1 tablespoon Dijon mustard
- ¼ cup apple cider vinegar
- 1 tablespoon honey
- ½ teaspoon smoked paprika
- 2 large sweet potatoes, cut into 1/4-inch slices
- 6 green onions
- Salt and freshly ground black pepper
- ½ cup crumbled parmesan crisps
- 59.15ml olive oil, plus extra for brushing
- 12.78g Dijon mustard
- 59.15ml apple cider vinegar
- 12.78g honey
- 2.13g smoked paprika
- 2 large sweet potatoes, cut into 1/4-inch slices
- 6 green onions
- Salt and freshly ground black pepper
- 118.29ml crumbled parmesan crisps
Sweet potatoes get a summer twist with a bright dressing, smoky paprika, charred green onions, and the scorch of the grill.
Preparation
STEP 1
In a small bowl, whisk together oil, mustard, vinegar, honey, and paprika. Season to taste with salt and pepper.
STEP 2
Lightly coat potatoes and onions with olive oil and season with salt and pepper.
STEP 3
Heat grill or grill pan to medium-high. Grill sweet potatoes until tender, about 3-4 minutes per side. Grill green onions until lightly charred, about 1-2 minutes.
STEP 4
When onions are cool enough to handle, slice into 1/2-inch pieces. Gently toss potatoes and onions with dressing, and top with parmesan crisps. Adjust seasoning and serve.
Options
Additional toppings could be grilled corn cut off the cob, toasted pumpkin seeds, or crumbled cooked bacon.
