Ingredients
  • 2 romaine hearts, halved length wise (leaving root intact)
  • 2 tablespoons olive oil
  • Dressing: (or your favorite store-bought)
  • 2 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon capers, drained and finely chopped
  • 2 teaspoons anchovy paste
  • 1 tablespoon red wine vinegar
  • ¼ cup fresh lemon juice
  • 1 tablespoon Worcestershire sauce
  • ½ cup olive oil
  • ½ cup grated parmesan cheese
  • Salt and freshly ground pepper
  • Garnishes:
  • Grated or shredded parmesan cheese
  • Croutons
  • Grilled chicken breast or salmon (optional)

  • 59.15ml fresh lemon juice
  • 12.78g Worcestershire sauce
  • 118.29ml olive oil
  • 118.29ml grated parmesan cheese
  • Salt and freshly ground pepper
  • Garnishes:
  • Grated or shredded parmesan cheese
  • Croutons
  • Grilled chicken breast or salmon (optional)

Preparation
STEP 1

Preheat grill to medium-high. Brush halved romaine hearts with olive oil on both sides.

STEP 2

To make the dressing whisk together minced garlic, Dijon, capers, anchovy paste, red wine vinegar, lemon juice, and Worcestershire sauce. Slowly whisk in olive oil. Gently stir in grated parmesan cheese. Season with salt and pepper to your taste preference.

STEP 3

Grill the romaine hearts cut side down for about 3-5 minutes, until they have some nice char marks, and then flip. Cook for about one more minute.

STEP 4

Pour desired amount of dressing over the top of grilled romaine. Sprinkle with extra parmesan cheese and croutons. Serve with grilled chicken or salmon for a full meal.
