Grilled Plantains with Citrus Glaze

Ingredients
- ½ cup orange juice
- ¼ cup lime juice
- 1 tablespoon brown sugar
- 2 large ripe plantains (yellow-black or black)
- 1 tablespoon canola oil
- Salt to taste

Preparation
STEP 1
Preheat grill to medium-high or broiler to high.
STEP 2
Combine orange juice, lime juice and sugar in a small saucepan. Bring to a boil and stir to dissolve sugar. Simmer until mixture thickens to consistency of thin syrup, about 3 minutes. Remove from heat and set aside.
STEP 3
Trim pointed ends from plantains. Cut into 3-inch chunks. Use a paring knife to slit skin lengthwise in several places on each piece. Remove skin and discard.
STEP 4
Cut each chunk in half lengthwise. Toss plantains, oil and salt in a large bowl. Grill, or broil on a sheet pan, turning once, until browned, about 5 minutes.
STEP 5
Brush glaze on plantains and continue to grill, turning once until richly colored, about 2 minutes (black spots are OK).
