  • 1 (8 ounces) piece halloumi cheese
  • Olive oil
  • Salt and pepper
  • 6 corn tortillas
  • Guacamole

Preparation
STEP 1

Preheat grill to medium-high heat.

STEP 2

Pat halloumi dry with a paper towel, and slice into ½ inch thick slices. Brush lightly with olive oil and season with salt and pepper.

STEP 3

Grill halloumi slices until dark grill marks appear, about, 2-3 minutes per side.

STEP 4

Toast your tortillas over the grill to give them a slight char, about 30 seconds per side.

STEP 5

Build tacos with grilled cheese, guacamole, and pico de gallo.
