Fresh Fruit Tart

The beauty of a fruit tart may look intimidating but fear not! It’s really rather simple to make! Prepare yourself for all the complements you will receive! *Recipe requires at least 2 hours of chilling time.
Ingredients
  • Crust:
  • 1 ½ cups graham cracker crumbs
  • 7 tablespoons unsalted butter
  • ¼ cup granulated sugar
  • Filling:
  • ⅓ cup granulated sugar
  • 1/3 cup +1 tablespoon cornstarch
  • ¼ teaspoon salt
  • 2 cups evaporated milk
  • 4 tablespoons butter
  • 2 teaspoons pure vanilla extract
  • Topping:
  • 1 pound fruit, assorted, cleaned and sliced, (approximately)
  • 2 tablespoons apricot or raspberry jam
  • 2 teaspoons water
  • Crust:
  • 354.88ml graham cracker crumbs
  • 89.46g unsalted butter
  • 59.15ml granulated sugar
  • Filling:
  • 78.86ml granulated sugar
  • 1/3 cup +1 tablespoon cornstarch
  • 1.07g salt
  • 473.18ml evaporated milk
  • 51.12g butter
  • 8.52g pure vanilla extract
  • Topping:
  • 453.59g fruit, assorted, cleaned and sliced, (approximately)
  • 25.56g apricot or raspberry jam
  • 8.52g water

Preparation
STEP 1

To make the crust, stir together the graham cracker crumbs, melted butter and sugar in a medium bowl. Spoon mixture into a 10-inch tart pan with removable bottom. Press crumbs into the bottom and up the sides of the pan, chill until ready to fill.

STEP 2

To make the filling, whisk together sugar, cornstarch, and salt in a medium saucepan. Add evaporated milk and whisk to combine. Bring to a boil over medium-low heat, while whisking vigorously until it starts to thicken, about 1 – 2 minutes.

STEP 3

Reduce heat to low and let it simmer for 1 minute, still whisking; then remove from heat and stir in butter and vanilla. For an extra silky texture strain through a fine-mesh sieve into a shallow bowl, optional.

STEP 4

Cover with plastic wrap, pressing it directly onto the surface of the cream to prevent skin from forming. Refrigerate until chilled, for at least 2 hours and up to 3 days.

STEP 5

To assemble, spoon filling into prepared crust. Arrange fruit on top of filling in any pattern or design of your liking. Pick fruits of different colors, have fun with it!

STEP 6

Heat the jam and water in microwave for about 30 seconds or in a small pot over low heat. Stir to combine. Using a pastry brush, glaze the top of fruit to make it shiny and preserve the fruit. Keep chilled. Serve within 24 hours.
