  • 4 (8 ounces) fish fillets, skin removed (salmon, halibut, cod)
  • 2 tablespoons butter, melted
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 4 tablespoons chopped fresh chives, divided
  • 1 cup heavy cream
  • 1 English cucumber, diced
  • ½ cup freshly squeezed lemon juice
  • 4 (226.8g) fish fillets, skin removed (salmon, halibut, cod)
  • 25.56g butter, melted
  • 4.26g kosher salt
  • 2.13g pepper
  • 51.12g chopped fresh chives, divided
  • 236.59ml heavy cream
  • 1 English cucumber, diced
  • 118.29ml freshly squeezed lemon juice

Preparation
STEP 1

Preheat oven to 375°F.

STEP 2

Butter a baking dish and add fillets. Brush fish with butter, season with salt and pepper and sprinkle with 3 tablespoons of chives.

STEP 3

Pour cream over fish. Cover dish and bake for 12-15 minutes.

STEP 4

Top with cucumber and lemon juice. Season with salt and pepper. Return to oven and bake, for an additional 5-10 minutes.

STEP 5

Give the sauce a little taste to check for seasoning, adjust if necessary. Garnish with remaining fresh chives (or herb of choice) and serve.

Options

Fresh tarragon or dill would also pair well and be a nice possible addition in this recipe.

Fish fillets sized anywhere from 6-8 ounces will work well, or you can also build this recipe using one large fillet.
