- 1 pound chicken breast, sliced (chicken thighs, steak or shrimp also delicious)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 white onion, sliced
- 1 package fajita seasoning
- 1 (14 ounces) bag cauliflower rice
- Salt and pepper
- 1 can black or pinto beans, drained and rinsed
- 1 cup guacamole (or sliced avocado)
- 1 cup pico de gallo
- Shredded cheese, optional (cheddar, jack, or cotija)
- Mexican crema or sour cream, optional
- Fresh cilantro and lime wedges, optional

This fajita-inspired dish has all the tender chicken, crisp veggies and hints of smoky heat you crave served in a bowl instead of a tortilla. Don't forget Mexican crema and a splash of lime.
Heat a large skillet over medium high heat. Coat lightly with oil. Add sliced chicken and cook until it starts to brown about 3-5 minutes.
Add peppers and onions to pan and cook for about 3 minutes more. Add fajita seasoning and follow package instructions.
While fajita mix is cooking heat a medium sized skillet to medium high heat. Coat with olive oil. Add cauliflower rice. Season with salt and pepper and cook until tender. About 5 minutes.
Build your bowls by starting with rice and sectioning all your delicious toppings; fajita mix, beans, guacamole, pico de gallo, cheese, sour cream, cilantro, and limes.
Prefer more of a salad? Swap out the cauliflower rice for lettuce as your base. Or have both! If you need something a bit more filling use regular white rice, brown rice or Mexican-style rice.
