A classic sauce made easy with the use of the microwave! Serve with anything from beloved Eggs Benedict to Eggs Florentine, crab cakes, salmon, asparagus, or artichokes!
Ingredients
  • 3 large EveryDay egg yolks
  • 1 tablespoon lemon juice
  • ΒΌ teaspoon kosher salt
  • 1 stick (1/2 cup) EveryDay unsalted butter
  • Pinch of cayenne pepper
  • 3 large EveryDay egg yolks
  • 12.78g lemon juice
  • 1.07g kosher salt
  • 1 stick (1/2 cup) EveryDay unsalted butter
  • Pinch of cayenne pepper

A classic sauce made easy with the use of the microwave! Serve with anything from beloved Eggs Benedict to Eggs Florentine, crab cakes, salmon, asparagus, or artichokes!

Preparation
STEP 1

Combine egg yolks, lemon juice, and salt in a microwave safe bowl and whisk well to combine.

STEP 2

In a glass measuring cup melt butter in microwave.

STEP 3

Slowly pour melted butter into egg yolk mixture while constantly whisking.

STEP 4

Reheat in microwave for 20 seconds and whisk.

STEP 5

Repeat in 10 second installments until sauce is thick and creamy. Add a pinch of cayenne pepper and season with additional lemon juice if desired.

Options

If sauce gets too thick slowly add small amounts of hot water until you reach your desired consistency.
