Ingredients
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- ½ small onion, chopped
- ½ green pepper, chopped

- 8 large pimento stuffed green olives, sliced

- 2 tablespoons distilled white vinegar

- ¼ teaspoon ground cinnamon

- 1 teaspoon ground cumin
- 2 teaspoons oregano (preferably Mexican)
- 2 tablespoons chopped cilantro
- 1 bay leaf
- 1 teaspoon hot sauce, or to taste

The name Picadillo comes from the Spanish word “picar” meaning to mince or chop, and every bite is delicious scooped up with rice. Serve with tostones and black beans to make it an extra filling meal.
Preparation
STEP 1
Heat olive oil in a large skillet over medium-high heat. Add garlic, onion, green pepper and beef. Cook until beef begins to slightly brown.
STEP 2
Add olives and capers and cook for 1 minute more.
STEP 3
Add tomatoes, vinegar, and spices, and stir well. Reduce heat and simmer for 45 minutes, stirring often, until nearly all liquid has evaporated.
STEP 4
Remove bay leaf. Taste and adjust seasoning as desired. Serve over long-grain white rice or, more traditionally, fried plantain cakes (tostones), topped with melted cheese.
Options
Additional ingredients can include raisins or diced potatoes.
This recipe can also be made using ground pork, turkey, chicken, or plant-based meat alternative.
