Ingredients
- 1 pound cabbage, cored, quartered and sliced
- 2 pounds potatoes, peeled and cut into 2-inch pieces
- 2 small leeks, washed and sliced
- 1 cup milk
- Salt and freshly ground pepper to taste
- ½ teaspoon ground nutmeg
- ½ cup butter

Colcannon is a traditional Irish dish of mashed potatoes and cabbage. This classic variation is buttery and delicious.
Preparation
STEP 1
In separate saucepans, cook cabbage and potatoes in boiling salted water until tender. Drain cabbage and mash potatoes.
STEP 2
In a large saucepan, combine leeks and milk and cook over medium heat until tender.
STEP 3
Add potatoes, salt, pepper and nutmeg and stir until blended.
STEP 4
Stir in cabbage and butter. Adjust seasoning to taste and serve.
Options
You can try kale instead of cabbage. Spring onions instead of leeks. Add bacon or Irish cheddar. This dish is open to your own variations!
