  • 1 tablespoon lemon zest
  • 3 tablespoons lemon juice
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh herbs (parsley, basil, dill, chives, mint)
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 pound fish or chicken
  • 12.78g lemon zest
  • 38.34g lemon juice
  • 59.15ml olive oil
  • 2 cloves garlic, minced
  • 25.56g chopped fresh herbs (parsley, basil, dill, chives, mint)
  • 4.26g kosher salt
  • 2.13g ground black pepper
  • 453.59g fish or chicken

Preparation
STEP 1

Mix lemon zest, juice, olive oil, garlic, chopped herbs, salt and pepper into a jar or bowl.

STEP 2

In either a dish or resealable bag coat fish or chicken with marinade.

STEP 3

Marinate fish for 20-30 minutes. Avoid longer or the citrus will begin “cooking” the fish. Marinate chicken for 30 minutes to 2 hours. Cook as desired.
