Any chocolate cake is a special chocolate cake, but the use of stout beer delivers malty flavors that highlight and complement the chocolate in a way your taste buds will love. Box cake mix makes bringing it all together a snap.
Preheat oven to 350°F.
Combine cake mix, beer, oil and eggs in a bowl. Mix well either by hand or using a mixer. Scrape sides as necessary and add chocolate. Mix for another 2 minutes.
Pour into a greased 9x13-inch baking dish. Bake for 30-45 minutes, until a knife inserted into center comes out clean. Remove and cool completely.
To make frosting, place beer in a small saucepan and bring to a simmer. Reduce to a thick syrup equaling approximately 1/4 cup. Let cool.
Place all ingredients, including reduced beer, in a food processor and pulse several times to combine. Process further until smooth and creamy. Frost cake and let set for 1 hour before slicing.
Coffee would be a good substitute for the stout if looking for an alternative. For the frosting use a ¼ cup of cooled coffee, no reduction necessary.
