Baked Feta Pasta

It’s amazing how something so simple can taste so amazing! Watch out weeknights…there’s a new pasta in town.
Ingredients
  • 2 pints cherry tomatoes (about 3-4 cups)
  • 2 large garlic cloves (4 small)
  • ½ cup olive oil
  • 1 (8 ounces) block feta cheese
  • 10 ounces short pasta, cooked and drained, water reserved
  • ½ cup thinly sliced fresh basil
  • Flake salt and fresh pepper
  • 1.14L cherry tomatoes (about 3-4 cups)
  • 2 large garlic cloves (4 small)
  • 118.29ml olive oil
  • 1 (226.8g) block feta cheese
  • 283.5g short pasta, cooked and drained, water reserved
  • 118.29ml thinly sliced fresh basil
  • Flake salt and fresh pepper

Preparation
STEP 1

Preheat oven to 400°F.

STEP 2

In a 9x13-inch baking dish, combine the tomatoes, garlic cloves and olive oil. Toss well and season lightly with salt and pepper.

STEP 3

Place the block of feta in the center of the baking dish, turning several times to coat in oil. Season lightly with salt and black pepper.

STEP 4

Place in the oven uncovered and bake until the tomatoes have all popped and the feta is browned, about 40 minutes.

STEP 5

Using the back of a large spoon, smash the tomatoes and feta until it becomes a sauce. Add pasta and stir to combine. Add reserved hot pasta water a little at a time if the sauce is too thick. Season to taste with salt and pepper and garnish with fresh basil.

Options

Some additions could include a teaspoon of Italian seasoning, dried oregano or thyme, a pinch of red pepper flakes, sliced red onion, lemon zest, kalamata olives, spinach, artichoke hearts, or asparagus spears.

This recipe can also be made substituting goat cheese for the feta, using any favorite pasta noodle including gluten free, or for a low carb option using spaghetti squash or spiralized noodles such as zucchini or butternut squash.
