Ingredients
- 1 ripe avocado, cubed
- 1 ripe mango, peeled and cubed
- 1 (16 ounces) package coleslaw mix (or shredded cabbage)
- ½ cup finely sliced red onion
- 2 tablespoons lime juice
- 2 tablespoons rice vinegar
- 1 (6 ounces) container plain Greek yogurt
- Salt and pepper to taste
- 1 ripe avocado, cubed

- 118.29ml finely sliced red onion
- 25.56g lime juice
- 25.56g rice vinegar
- 1 (170.1g) container plain Greek yogurt
- Salt and pepper to taste
Pre-shredded coleslaw makes this recipe a snap, and Greek yogurt adds creaminess while keeping it light and healthy.
Preparation
STEP 1
Place avocado, mango, coleslaw and red onion in a medium bowl.
STEP 2
In a small bowl, stir together lime juice, vinegar and Greek yogurt.
STEP 3
Add dressing to avocado mixture and toss.
STEP 4
Season to taste with salt and pepper and chill until ready to serve.
