They used only the best estate grown grapes and local materials.The Santi Winery is located in the historic village of Illasi in Valpolicella. It is situated in the far eastern province of Verona, nestled close to the Lessini Mountains. The Val d’Illasi stretches for just a few kilometers from Verona to the border between Soave and Valpolicella. Today the celebrated winemaker Cristian Ridolfi is managing the winery. Ridolfi began his career at the Santi winery, developed his skills at the Bertani winery where he worked for nearly 20 years and he is now back “home”, where his work-life started. He prefers to use the most traditional variety, Corvina, along with Corvinone and Rondinella. Like the founder Carlo Santi, Cristian believes in using local products in his winemaking, such as native Chestnut and Cherry wood for the aging process.
