A delicious twist on traditional chili using Italian sausage. Simmering for a bit allows the flavors to develop, and making it a day ahead deepens the flavors even more.
Ingredients
  • 1 tablespoon olive oil
  • 1 ¼ pounds Italian sausage
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 jalapeño peppers, seeded and minced
  • 1 ½ tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) cannellini beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 tablespoon red wine vinegar
  • Salt and freshly ground pepper
  • 1 cup sour cream
  • ½ cup chopped cilantro
  • 12.78g olive oil
  • 566.99g Italian sausage
  • 1 onion, diced

  • 8.52g ground cumin
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) cannellini beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 12.78g red wine vinegar
  • Salt and freshly ground pepper
  • 236.59ml sour cream
  • 118.29ml chopped cilantro

Preparation
STEP 1

Heat olive oil in a large, heavy-bottomed soup pot over medium-high heat. Add sausage and brown, breaking into small pieces as it cooks. Transfer to a paper towel-lined plate.

STEP 2

Add onion to pan and sauté until translucent. Add peppers and sauté for 1 minute. Add chili powder and cumin and stir for about 30 seconds. Add tomatoes and beans and simmer 15 minutes.

STEP 3

Add sausage and simmer until cooked through, stirring occasionally, about 15 minutes. Stir in vinegar and season with salt and pepper.

STEP 4

Serve in bowls garnished with sour cream and cilantro.

Options

Slow-cooker instructions: Sauté sausage, onions and peppers and place in a crock pot with remaining ingredients except vinegar. Cook on low for 5-6 hours. Add vinegar just before serving.
