Heat a large skillet over medium-high heat. Add the marinated shrimp and a drizzle of olive oil to the pan. Cook shrimp for 2–3 minutes per side, or until opaque and cooked through.
To grill, preheat a grill to medium-high heat. Thread the shrimp onto skewers or place them directly on the grill. Cook for 2–3 minutes per side, until opaque and cooked through.
For a saucier preparation, add cherry or grape tomatoes to the skillet with the shrimp. Cook until the tomatoes begin to soften and burst, tossing with the shrimp and their flavorful juices.
Enjoy on their own or serve the shrimp warm over pasta or risotto or let them cool slightly and add them to a cold pasta salad or green salad. Finish with a squeeze of lemon.
Try the shrimp:
Over a cold pasta salad with fresh vegetables and lemon
Alongside or on top of a simple green salad
Tossed with hot pasta and the pan juices
Spoonfuls over creamy risotto
Cooked with cherry tomatoes for an easy, saucy pasta topping
Grilled and served with crusty bread and Mediterranean-inspired sides
Add feta, olives, roasted vegetables, or fresh herbs to make it your own.
