Spicy Chile Juicy Lucy Burger

This burger packs a cheesy surprise and brings the heat! Our Ballard market doesn’t mess around! Fire roasted Hatch chiles would be a great substitute during their season!
Ingredients
  • 1 ½ pounds ground beef
  • 1 teaspoon ground chipotle powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ pound pepper jack cheese, diced or grated
  • 2 poblano peppers
  • 4 hamburger buns, toasted
  • Chipotle mayo
  • Lettuce
  • Sliced tomato
  • Sliced red onion
  • 680.39g ground beef
  • 4.26g ground chipotle powder
  • 4.26g kosher salt
  • 2.13g ground black pepper
  • 226.8g pepper jack cheese, diced or grated
  • 2 poblano peppers
  • 4 hamburger buns, toasted
  • Chipotle mayo
  • Lettuce
  • Sliced tomato
  • Sliced red onion

Preparation
STEP 1

Add ground beef to a bowl. Season meat with chipotle powder, salt and pepper. Mix gently until combined. Form meat into 8 thin patties.

STEP 2

To build a juicy lucy burger take one patty. Top it, leaving a border, with a ¼ of the pepper jack cheese. Take a second patty and place it over the top sealing the two patties together around the edges. You want to be sure to seal your “juicy” cheese surprise on the inside. Repeat this to build all four burger patties.

STEP 3

Preheat grill to medium-high heat.

STEP 4

Either on the preheat grill, under the broiler, or directly over a gas burner char the poblano peppers on all sides until the skin is darkened and pepper is softened. Place peppers in a bowl and cover with plastic wrap to steam until cool enough to handle.

STEP 5

Peel the skin off each pepper and remove the stem and seeds. Divide each pepper in half.

STEP 6

Cook burgers on preheated grill until grill marks appear, meat is cooked, and cheese is melted, about 5-7 minutes per side.

STEP 7

To build your burger add chipotle aioli to both the top and bottom half of the bun. Add lettuce, tomato, onion and your burger patty. Top the patty with half of the roasted pepper. Cap the burger off with the top bun, serve and enjoy!
