Spam Fried Rice

- 1 teaspoon cooking oil
- 2 eggs, beaten
- 6 ounces Spam, diced
- ½ cup chopped onion
- ½ cup chopped carrot
- ½ cup chopped celery
- 2 cloves garlic, minced
- ½ cup frozen peas
- 1 teaspoon sesame oil
- 2 tablespoons soy sauce
- 3 cups cooked rice (cooled preferably)
- Salt and pepper
- Sliced green onions for garnish, optional
- 4.26g cooking oil
- 2 eggs, beaten
- 170.1g Spam, diced
- 118.29ml chopped onion
- 118.29ml chopped carrot
- 118.29ml chopped celery
- 2 cloves garlic, minced
- 118.29ml frozen peas
- 4.26g sesame oil
- 25.56g soy sauce
- 709.76ml cooked rice (cooled preferably)
- Salt and pepper
- Sliced green onions for garnish, optional
A quick and easy meal with tasty SPAM! Also great for utilizing leftover rice!
Heat a wok or large skillet to medium high heat. Coat with oil and scramble eggs. Once cooked remove eggs from pan.
With pan back on medium-high heat add diced Spam. Cook until fat starts to render, and pieces have become browned and slightly crisp, about 3-5 minutes.
Add onion, carrot and celery. Cook until vegetables are bright and just start to soften, about 2-3 minutes.
Add garlic and cook until aromatic, about 30 seconds. Add peas and cook for 1 minute more.
Add rice to the pan. Give it all a good mix and then let rice sit undisturbed for one minute to allow crunchy bits to form on the bottom of the pan.
Add sesame oil and soy sauce. Toss everything to combine. Return egg to the pan and give it a mix. Taste for seasoning, garnish with green onions, and serve right away!
Chopped pineapple is a delicious addition to this recipe if you wish!
