Spam Carbonara

- 6 Spam, diced
- 12 ounces pasta (spaghetti, linguini or bucatini)
- 1 egg
- 2 egg yolks
- ½ cup grated pecorino
- ½ cup grated parmesan
- Freshly ground black pepper

Taking a twist on a classic utilizing Spam! It is a delicious, even if surprising, substitution for the traditional guanciale used in Carbonara.
Bring a large pot of water to boil. Season with salt. Begin cooking pasta per package instructions to al dente.
Add diced Spam to a large skillet. Heat to medium-high heat. Cook Spam until fat is rendered and meat is crispy, about 5 minutes.
While Spam and pasta are cooking add egg, egg yolks, pecorino, half of the parmesan and a good amount of freshly ground black pepper to a bowl. Whisk until well combined.
Once Spam is crisped add cooked pasta directly to the pan. Be sure to reserve 1 cup of hot pasta water. Toss pasta with spam and any fat that has rendered in the pan.
Remove pan from heat. Add egg and cheese mixture to pasta and toss. Begin adding some of the pasta water, about ¼ cup at a time, mixing in between, until rich luxurious sauce forms. Serve immediately with the remaining parmesan cheese and an extra sprinkle of pepper.
